Our grasshopper sandwich cookies are the perfect combination of mint and chocolate. These cookies are so soft and chewy with the perfect amount of sweetness.
It’s been a little bit since we’ve obsessed about our cake mix cookie recipe that is to die for, aka our grasshopper sandwich cookies.
These chocolate mint cookies are so good! Plus since they are cake mix cookies, they are also ridiculously simple to put together. No need for a long list of ingredients either.
Grasshopper cookie sandwiches are also a fun thing to make with your kids. Just make the cookie patties up and give them the green frosting and let them have at it!
Speaking of patties, St. Patrick’s day is coming up and all the mint recipes work great for the St. Patrick’s day parties! Some of my favorites to make are our Andes mint cookies, chocolate thin mint brownies, and of course thin mint poke cake!
Ingredients You’ll Need For Our Grasshopper Sandwich Cookies Recipe:
Cookie Ingredients
- Devil’s food cake mix
- Eggs
- Vegetable, butter, or original shortening
Frosting Ingredients
- Butter
- Milk
- Powdered sugar
- Peppermint extract
- Green food coloring
How To Make Our Grasshopper Sandwich Cookies Recipe:
Start by preheating the oven to 350 degrees.
Then a medium mixing bowl combine the devil’s food cake, eggs, and the shortening together until it is well combined. The dough will be thick.
Now take some dough and roll it into a 1-inch ball and place it on an ungreased cookie sheet.
Once you have all the balls rolled into similar sizes, place the cookie sheet in the oven for 8 minutes.
After they are done remove the pan from the oven and immediately put the cookies on a cooling rack.
While those cool down, it’s time to make the frosting.
Combine the butter, milk, powdered sugar, peppermint extract, and the green food coloring in a mixing bowl and beat it all together with a hand or stand mixer.
We use around 8-9 drops of the food coloring, but feel free to add more as you need it.
Once the cookies have cooled, spread a couple of tablespoons of the frosting onto one cookie and then flip another cookie on top to create your delicious grasshopper sandwiches!
To Make The Perfect Chocolate and Mint Cookies You Will Need:
- Large mixing bowl
- Hand or stand mixer (THIS is our all time favorite hand mixer!)
- Cookie sheets
- Spatula

Our grasshopper sandwich cookies are the perfect combination of mint and chocolate.

Ingredients
Cookies:
- 15.25 ounces Devils Food cake mix
- 2 eggs
- ¾ cup vegetable shortening butter or regular
Frosting:
- ½ cup butter (softened to room temp)
- 2 Tablespoons milk
- 2 cups powdered sugar
- 1½ teaspoon peppermint extract
- 3 drops green food coloring
Instructions
Preheat oven to 350 degrees F.
Mix together cake mix, eggs and shortening until well combined. The dough will be pretty thick.
Roll dough into 1-inch balls, making sure they are all similar in size.
Place dough onto ungreased cookie sheet and bake for 8 minutes.
Immediately transfer cookies to a cooking rack.
To make the frosting, mix together butter, milk, powdered sugar, peppermint extract and as much green food coloring as desired (I used 8 drops) until smooth.
Spread onto cooled cookies and sandwich together.
