think u must have over cooked the chillies. Thats why it might have hardened.
Method. Tip the peppers, chillies (with seeds), ginger and garlic into a food processor, then whizz until very finely chopped. Scrape into a heavy-bottomed pan with the tomatoes, sugar and vinegar, then bring everything to the boil.
Both a jam and a chutney will contain sugar, although a jam would be much sweeter, with the chutney having a more acidic, tangy flavour from the addition of vinegar. To preserve a chutney a combination of vinegar and sugar are used, whilst in a jam it is the sugar alone which acts as the preserving agent.
The second chilli jam vs chilli sauce difference is sweetness. Unless you've got a super sweet hot sauce, a chilli jam will typically be a lot sweeter. This sweetness is what makes a jam so versatile, it works on pizza, fried chicken, with cheese or almost anything else (our top 6 uses of jam are here).
Just wait. You've followed the recipe and even tested the jam for thickness by smearing a bit of the cooked jam on a cold spoon straight from the freezer, but it still looks runny in the canning jars after processing. ...
It could also be that you have put the jam into jars before it has had time to cool slightly and thicken. You need to let the jam stand for 30 to 40 minutes, so that it becomes more viscous and the pepper flecks are suspended throughout the jam.
You need to let the jam stand and cool, so that the jam can thicken and hold the flecks of chilli and red pepper in suspension. This can take 15 minutes and up to 40 minutes (depending on pan size and the temperature of your kitchen).
Blue cheese and chipotle: The tangy, pungent flavor of blue cheese complements the smoky heat of chipotle peppers. We love this Scarlett and Mustard Chipotle chilli jam with cheese and crackers. 4. Feta cheese and serranos: The saltiness of feta cheese balances the mild to moderate heat of serranos.
When you think the jam has reached setting point take the pan off the heat and drop a teaspoonful of the jam onto the plate. Let it stand for a minute then see if the jam has set or not. If you push your finger through it then the jam should not flow back. The Chilli Jam is soft set rather than very firm.
A sweet chilli jam with all the smokey flavours of the Mexican Chipotle Chilli. Chipotle is a smoke-dried Jalapeno, we use it in both our BBQ sauces for its rich smoky flavour, but its such an amazing tasting chilli it can hold its very own in our latest addition to the Smokey range; Chipotle Chilli Jam.
Our award winning Carolina Reaper chilli jam is made using officially the hottest chilli on the planet at around 1.5 million Scovilles. We also make other hot versions with Naga and Trinidad Scorpion Chillies for those who like it hot!
This chilli jam is made from fresh chillies, unlike cheaper sauces made from chilli powder. The result is a build up of heat which doesn't knock out your taste-buds, but enhances the flavours of the meat, fish or cheese with which it is eaten and adds zest to your cooking without overwhelming the ingredients.
Nam Prik Pao is almost always referred to as roasted chili paste or chili paste in oil and also often termed “chili jam”. It does have a jam like consistency and is also rather sweet. An important part of Nam Prik Pao is the use of shrimp paste or dried shrimp and fish sauce.
What does chilli jam taste like? In taste, a jam is typically sweeter than a traditional hot sauce which comes from the sugar in the recipe. That sweetness is something that makes chilli jam such a versatile condiment, perfect with pizza, a cheeseboard and even a bacon sandwich.
There are lots of different spicy condiments from around the world - "Chilli jam" is kind of a British version of several of them. Jam and marmalade making is a very British pastime so it's no surprise that it became a popular way to add a little heat to any dish!
