In case you missed the memo… Weight Watchers Banana Bread Recipe just 2 points per serving is the perfect antidote to combating sports widowship.
I am a sports widow– whether it’s the super bowl, the World Series, the basketball championships (not sure what their official final competition is called- do I care… NO!) golf, hockey– and if they broadcast curling- I’d probably be left in the dust for that one too.
Somehow the fates had me marry a guy who is super-obsessed with sports- and although I’ve really tried to understand the dynamics of the various games and teams he roots for the whole thing is pretty much lost on me- and I usually spend Sundays, bored silly! Truthfully… all this hype and attention over guys chasing a ball?
Well, beginning this Sunday things are going to be VERY different. I’m arming myself with a few pretty nifty goodies that I can enjoy and not feel GUILTY about- while he sits on the couch with his buddy- my son- and schools him (instead of me) on the wonder and excitement that is the game dujour I’ll be indulging inWeight Watchers Banana Bread Recipe just 2 points per serving!

Ingredients Weight Watchers Banana Bread Recipe just 2 points per serving makes 12 servings

11⁄4cup (s)white self-rising flour15 Points

DIRECTIONSWeight Watchers Banana Bread Recipe just 2 points per serving
1. Preheat oven to 350 degrees andspray loaf pan(9×5 or 8×4) with non stick cooking spray.
2. In a medium bowl add bananas and use a fork to mash well.
3. Add egg, vanilla, brown sugar/stevia . Stir well.
4. In a separate bowl combine flour, baking soda & powder.
5. Add dry ingredients into the wet slowly as you stir.
Before the two are incorporated add in applesauce. Stir just until barely combined.
The number one tip is to not over mix.
6. Pour into pan and bake for 30-45 minutes or until an inserted knife or toothpick comes out clean. If making them into muffins decrease the cooking time to 14-16 minutes.
Store in an airtight container
